Piwna 47. Εκεί όπου η πολωνική γαστρονομία αποκτά σύγχρονη ταυτότητα, με φόντο την παλιά πόλη του Gdańsk – Michelin Guide Restaurant (Also in English)

Σαν ξεκινήσεις τη βόλτα σου στους στρωμένους με πέτρα, γραφικούς δρόμους της παλιάς πόλης του Gdańsk, στη σκιά της συγκλονιστικής Basilica Mariacka, σίγουρα θα πέσει το βλέμμα σου και στο Piwna 47. Μην διστάσεις, μπες μέσα και θα ζήσεις μια γαστρονομική εμπειρία που, χωρίς να κάνει θόρυβο, έχει πολλούς λόγους για να σου μείνει για πάντα στη μνήμη.
 
Το όνομα του εστιατορίου είναι και η διεύθυνσή του. Piwna 47, ένας από τους πιο όμορφους δρόμους του ιστορικού κέντρου, με την επιβλητική γοτθική εκκλησία να δεσπόζει κυριολεκτικά λίγα βήματα πιο πέρα. Το Piwna47, που έχει κερδίσει θέση στον Michelin Guide ως εστιατόριο που αξίζει να επισκεφθείς, πατά γερά στην πολωνική και ιδιαίτερα στην πομερανική γαστρονομική παράδοση, αλλά την κοιτάζει με σημερινό βλέμμα.
 
Εμείς επιλέξαμε να καθίσουμε στον πίσω, γυάλινο χώρο του εστιατορίου. Γυάλινοι τοίχοι και οροφή, πράσινο που αγκαλιάζει το σκηνικό, παλιά κτίσματα από κόκκινα τούβλα και, πάνω απ’ όλα, ο επιβλητικός πύργος της Basilica Mariacka να πρωταγωνιστεί στο φόντο. Και όσο έπεφτε το βράδυ, το σκηνικό γινόταν ακόμη ομορφότερο, καθώς ο φωτισμός ανέδειχνε τις λεπτομέρειες της ιστορικής πόλης.
 
 
Το εσωτερικό του Piwna47 κινείται στην ίδια λογική. Ρουστίκ πινελιές, ξύλο, όμορφοι χρωματισμοί και μια επίπλωση φτιαγμένη με το σήμερα, χωρίς όμως να χάνει την αίσθηση της παλιάς πόλης του Gdańsk. Και φυσικά, δεκάδες φιάλες κρασιού που δίνουν από την πρώτη στιγμή το στίγμα μιας γαστρονομικής κουλτούρας που εδώ έχει ιδιαίτερη σημασία.
 
 
Η λίστα κρασιών, άλλωστε, είναι από τα δυνατά χαρτιά του Piwna47. Το εστιατόριο είναι καταχωρημένο στο Star Wine List ως White Star, διάκριση που απονέμεται σε χώρους με οινοκάρτα εγκεκριμένη από τον διεθνή οδηγό. Οι επιλογές ταξιδεύουν σε διεθνείς αμπελώνες, χωρίς να ξεχνούν την ολοένα ανερχόμενη οινική σκηνή της Πολωνίας.
 
 
Ο νεαρός, αλλά ιδιαίτερα έμπειρος υπεύθυνος εξυπηρέτησης εστιατορίου που ανέλαβε τη βραδιά μας, μαζί με την ομάδα του, μας έδωσαν από νωρίς να καταλάβουμε κάτι που πολλές φορές ξεχνάμε: η εξυπηρέτηση είναι το ήμισυ του παντός. Ευγένεια, γνώση, διακριτικότητα και κυρίως συμβουλευτική διάθεση, χωρίς ούτε για μια στιγμή να βαραίνουν το κλίμα ή να δημιουργούν εκείνη την ενοχλητική αίσθηση του στημένου service. Ήξεραν τι σερβίρουν, ήξεραν γιατί το σερβίρουν και ακόμη περισσότερο, ήξεραν πώς να το παντρέψουν με το σωστό κρασί.
 
 
Η βραδιά ξεκίνησε με μια σκούρα μπύρα, γεμάτη αρώματα κριθαριού και βύνης, πριν πάρουν τη σκυτάλη τα πρώτα γαστρονομικά snacks. Και κάπου εδώ άρχισε να γίνεται ξεκάθαρο πως η κουζίνα δεν έχει σκοπό απλώς να σου σερβίρει πολωνικά πιάτα. Θέλει να σου δείξει πόσο σύγχρονα μπορούν να γίνουν.
 
Πρώτο μικρό εδώδιμο έργο τέχνης, η Kashubian ρέγγα πάνω σε τραγανιστή βάση, τύπου tartlet, με κεράσια, σπόρους μουστάρδας και shallot. Η ρέγγα, προϊόν με βαθιές ρίζες στη γαστρονομία της Πομερανίας και της Kashubia, απέκτησε μια εντελώς διαφορετική διάσταση μέσα από την ελαφρά οξύτητα των κερασιών, την ένταση της μουστάρδας και τη διακριτική γλύκα του κρεμμυδιού. Μια μπουκιά μικρή στο μέγεθος, μεγάλη όμως σε χαρακτήρα.
 
 
Το σπιτικό ψωμί, φτιαγμένο στο εστιατόριο, ήρθε παρέα με αρωματικό βούτυρο. Από εκείνα τα απλά πράγματα που, όταν γίνονται σωστά, δεν χρειάζονται ιδιαίτερες συστάσεις.
 
 
Το πρώτο ορεκτικό, το μαριναρισμένο καλκάνι ήταν μια έκφραση θαλασσινής φρεσκάδας. Νοτισμένο με πράσινο μήλο, celery και ηλιόσπορους, είχε καθαρή γεύση και όμορφη υφή. Το μήλο έφερε την απαραίτητη οξύτητα και δροσιά, ενώ οι ηλιόσποροι πρόσθεσαν εκείνο το μικρό τραγανό στοιχείο που έλειπε για να ολοκληρωθεί η εικόνα.
 
 
Και μετά ήρθαν οι ντομάτες. Ντομάτες με βουτυρόγαλα, γλυκό του κουταλιού λεμόνι, κουκιά, βασιλικό και εσαλότ. Εδώ η εποχικότητα έκανε πραγματικά αισθητή την παρουσία της. Η γλυκύτητα της ντομάτας συναντούσε τη δροσερή οξύτητα του buttermilk, το λεμόνι έδινε ένταση και τα κουκιά πρόσθεταν σώμα. Ένα πιάτο που δεν χρειάστηκε να φορτωθεί με πολλά για να αποκτήσει ενδιαφέρον.
 
 
Και να σου πω κάτι ακόμη που μας συγκίνησε πραγματικά. Η περηφάνια των ανθρώπων του Piwna47 για τις πρώτες ύλες τους. Όχι μόνο των παιδιών που μας εξυπηρετούσαν, αλλά και του πραγματικά αξιόλογου νεαρού ηγέτη και σεφ της κουζίνας Alan Ławrynowicz, που βγήκε στην αίθουσα, έκανε τη γύρα του στα τραπέζια και μιλούσε για τα προϊόντα και τους προμηθευτές. Δεν ήταν μια τυπική παρουσίαση. Ήταν περηφάνια. Περηφάνια για την Πολωνία, για τους ανθρώπους που παράγουν, για τα προϊόντα που φτάνουν στην κουζίνα τους. Και αυτό, ειλικρινά, το εκτιμήσαμε πολύ. Η κουζίνα του Alan Ławrynowicz κινείται ακριβώς πάνω σε αυτή τη βάση. Πολωνική και πομερανική στον πυρήνα, σύγχρονη στην τεχνική και χωρίς να φοβάται τις γαλλικές ή άλλες διεθνείς επιρροές.
 
 
Με την κοτολέτα χοιρινού ήρθε και το Bouchard Aîné & Fils Pinot Noir 2022. Το χοιρινό, πάνω στο κόκαλο και αυτό από την γύρω περιοχή, ήρθε με αγγιγμένο με νότες κρεμμυδιού, σος μπύρας και μιας άξιας για ειδική βράβευση αγγουροσαλάτας τουρσί. Πλούσιο πιάτο, με εκείνη την ανακουφιστική αίσθηση του καλού comfort food, αλλά σε πιο προσεγμένη και σύγχρονη εκδοχή. Το Pinot Noir, με τον φρουτώδη του χαρακτήρα και τις φίνες τανίνες, αποδείχθηκε εξαιρετικός συνοδός.
 
 
Το ολόφρεσκο καλκάνι, ήρθε με łazanki pasta, το παραδοσιακό ζυμαρικό της περιοχής, λάχανο, beurre blanc, σοτέ μπέικον ηλιόσπορους και κολοκυθάκια. Εδώ η γαλλική τεχνική συνάντησε την πολωνική παράδοση. Η beurre blanc έδωσε βελούδινη υφή, το bacon πρόσθεσε βάθος, ενώ τα λαχανικά κράτησαν τη γεύση φρέσκια και καθαρή. Για το πιάτο αυτό επιλέξαμε ένα πολωνικό Riesling, το Winnica Milsko Riesling 2022, με την οξύτητά του να λειτουργεί σχεδόν σαν γαστρονομικό ψαλίδι, κόβοντας τη λιπαρότητα της σάλτσας και αφήνοντας τον καλκάνι να πρωταγωνιστεί.
 
 
Το επιδόρπιο ήρθε σαν να άνοιξε ξαφνικά ένα παράθυρο μέσα στο καλοκαίρι. Rhubarb, λευκή σοκολάτα, crumble και raspberry sorbet. Ολόδροσο, ανάλαφρο, με την οξύτητα του ραβέντι και του raspberry sorbet να ισορροπούν όμορφα τη λευκή σοκολάτα. Και εκείνη η επίγευση… από αυτές που μένουν στο στόμα για λίγο ακόμη, ακόμη κι όταν το πιάτο έχει ήδη απομακρυνθεί από μπροστά σου.
 
 
Κι επειδή ένα καλό δείπνο πρέπει να τελειώνει με τον σωστό τρόπο, ήρθαν τα μικρά petit fours του chef. Μικρά, κομψά και φτιαγμένα με ακρίβεια, σαν τελευταίες πινελιές σε έναν πίνακα που μόλις ολοκληρώθηκε.
 
 
Εν κατακλείδι το Piwna47 δεν προσπαθεί να σε εντυπωσιάσει με φωνές. Σε κερδίζει σταδιακά. Με την τοποθεσία, τον όμορφο χώρο, την εξαιρετική λίστα κρασιών, την ευγένεια των ανθρώπων του και, κυρίως, με μια κουζίνα που παίρνει την πολωνική πρώτη ύλη και την κοιτάζει μέσα από ένα σύγχρονο γαστρονομικό πρίσμα.
 
Φεύγοντας από την Piwna, με τον φωτισμένο πύργο της Basilica Mariacka να δεσπόζει πάνω από τα κόκκινα τούβλα της παλιάς πόλης, σκέφτηκα πως τελικά το Gdańsk έχει ακόμη έναν λόγο για να επιστρέψεις. Και αυτός βρίσκεται στον αριθμό 47 της γραφικής οδού Piwna.

Piwna 47. Where Polish gastronomy finds a contemporary identity in the heart of Gdańsk – Michelin Guide Restaurant
 
As you begin walking through the cobbled, picturesque streets of Gdańsk’s Old Town, beneath the shadow of the breathtaking St Mary’s Basilica, your eyes will almost certainly be drawn to Piwna 47. Don’t hesitate. Step inside, and you will discover a dining experience that makes no attempt to shout for attention, yet has every reason to stay in your memory for a very long time.
 
The restaurant’s name is also its address. Piwna 47, on one of the most beautiful streets in Gdańsk’s historic centre, with the imposing Gothic church standing literally just a few steps away.
 
 
Piwna 47, recognised by the Michelin Guide as a restaurant worth visiting, is firmly rooted in Polish, and particularly Pomeranian, culinary tradition, while looking at it through a contemporary lens.
 
 
We chose to sit in the restaurant’s rear glass-covered area. Glass walls and ceiling, greenery surrounding the setting, historic red-brick buildings and, above all, the magnificent tower of St Mary’s Basilica rising in the background. As evening fell, the setting became even more beautiful, with the lighting bringing out the details and character of the historic city.
 
 
The interior of Piwna 47 follows the same philosophy. Rustic touches, wood, beautiful colours and contemporary furnishings create a space that feels very much of today, without losing its connection with the historic character of Gdańsk. And, of course, there are dozens of wine bottles, immediately signalling the importance wine has in the restaurant’s gastronomic culture.
 
The wine list is, in fact, one of Piwna 47’s strongest assets. The restaurant is listed by Star Wine List as a White Star, a distinction recognising restaurants with wine programmes approved by the international guide. The selection travels through vineyards around the world, while also showcasing Poland’s increasingly exciting wine scene.
 
The young yet remarkably experienced restaurant manager who looked after us that evening, together with his team, made one thing clear from the very beginning — something that is too often forgotten: service is half the experience. Courtesy, knowledge, discretion and, above all, a genuine willingness to advise, without ever making the service feel intrusive or overly rehearsed. They knew what they were serving, they knew why they were serving it and, perhaps most importantly, they knew how to pair it with the right wine.
 
 
The evening began with a dark beer, rich in barley and malt aromas, before the first gastronomic snacks arrived. And it was here that it became clear that this kitchen has no intention of simply serving Polish dishes. It wants to show just how contemporary Polish cuisine can be.
 
The first little edible work of art was Kashubian herring served on a crisp tartlet base, with cherries, mustard seeds and shallot. Herring, a product deeply rooted in the culinary traditions of Pomerania and Kashubia, took on a completely different dimension through the gentle acidity of the cherries, the intensity of the mustard and the subtle sweetness of the onion. Small in size, but big in character.
 
 
The house-made bread, baked at the restaurant, arrived with aromatic butter. One of those simple things that, when done properly, need very little introduction.
 
 
The first starter, marinated turbot, was an expression of pure maritime freshness. Served with green apple, celery and sunflower seeds, it offered clean flavours and beautiful texture. The apple brought the necessary acidity and freshness, while the sunflower seeds provided the little touch of crunch needed to complete the dish.
 
 
And then came the tomatoes. Tomatoes with buttermilk, preserved lemon, broad beans, basil and shallot. This was where seasonality truly made its presence felt. The sweetness of the tomatoes met the cool acidity of the buttermilk, the lemon added intensity, while the broad beans gave the dish body. A plate that needed very little to become genuinely interesting.
 
 
And let me tell you something else that genuinely moved us: the pride the people at Piwna 47 have in their ingredients. Not only the members of the service team, but also the restaurant’s impressive young chef and culinary leader, Alan Ławrynowicz, who came out into the dining room, moved from table to table and spoke about the products and the suppliers behind them.
 
 
This was not a routine presentation. It was pride. Pride in Poland, in the people who produce its ingredients and in the products that make their way into the kitchen. And, honestly, we appreciated that very much.
 
Alan Ławrynowicz’s cooking is built precisely around this philosophy. Polish and Pomeranian at its core, contemporary in technique and unafraid to embrace French and other international influences.
 
 
With the pork chop came Bouchard Aîné & Fils Pinot Noir 2022. The bone-in pork, sourced from the surrounding region, was served with onion notes, a beer sauce and a truly outstanding pickled cucumber salad, worthy of special mention. It was a rich dish, with that comforting quality of good comfort food, but presented in a more refined and contemporary way. The Pinot Noir, with its fruity character and fine tannins, proved to be an excellent companion.
 
 
The impeccably fresh turbot arrived with łazanki pasta, a traditional local pasta, cabbage, beurre blanc, sautéed bacon, sunflower seeds and courgettes. Here, French technique met Polish tradition. The beurre blanc brought a velvety texture, the bacon added depth, while the vegetables kept the flavours fresh and clean.
 
 
For this dish, we chose a Polish Riesling, Winnica Milsko Riesling 2022. Its acidity worked almost like a culinary pair of scissors, cutting through the richness of the sauce and allowing the turbot to remain the star of the plate.
 
Dessert arrived as if someone had suddenly opened a window onto summer. Rhubarb, white chocolate, crumble and raspberry sorbet. Fresh, light and beautifully balanced, with the acidity of the rhubarb and raspberry sorbet providing the perfect counterpoint to the white chocolate.
 
 
And then there was that lingering finish — the kind that stays with you for a little while longer, even after the plate has already been cleared away.
 
And because a good dinner should always end on the right note, the chef’s petit fours arrived. Small, elegant and made with precision, like the final brushstrokes on a painting that has just been completed.
 
 
In conclusion, Piwna 47 does not try to impress you by making a great deal of noise. It wins you over gradually. Through its location, its beautiful setting, its excellent wine list, the warmth and professionalism of its people and, above all, through a kitchen that takes Polish ingredients and views them through a contemporary gastronomic lens.
 
As we left Piwna 47, with the illuminated tower of St Mary’s Basilica rising above the red-brick buildings of the Old Town, I thought that Gdańsk now has yet another reason to return.
 
And that reason can be found at number 47, on the picturesque Piwna Street.
