
Η αλήθεια είναι μία. Η πραγματική αξία ενός εστιατορίου φαίνεται στον χρόνο. Στην ποιότητα που παραμένει σταθερή, στη συνέπεια που δημιουργεί εμπιστοσύνη και, κυρίως, στην επιθυμία του κοινού να επιστρέφει, γνωρίζοντας ότι θα βρει ξανά εκείνη τη γνώριμη γαστρονομική και όχι μόνο, εμπειρία που αναζητά.
Το La Cultura Del Gusto στην περιοχή Περνέρα ανήκει ξεκάθαρα σε αυτή την κατηγορία. Από το 2002 μέχρι σήμερα έχει καταφέρει να παραμείνει ένας σημαντικός γαστρονομικός προορισμός στον Πρωταρά, σε μια περιοχή όπου μεγάλο μέρος της εστίασης λειτουργεί εποχικά. Το ίδιο, όμως, συνεχίζει ακάθεκτο, έχοντας χτίσει μια σταθερή σχέση τόσο με τους ντόπιους όσο και με τους επισκέπτες του νησιού. Και αυτό δεν είναι απλώς μια διαπίστωση· είναι κάτι που αντιλαμβάνεσαι από την πρώτη στιγμή που θα περάσεις την πόρτα του.
Εμείς πάντως πήγαμε ξανά μια καθημερινή. Και το εστιατόριο ήταν, ως συνήθως, γεμάτο. Ντόπιοι, ξένοι επισκέπτες, αλλά και επαναλαμβανόμενοι τουρίστες, άνθρωποι δηλαδή που επιστρέφουν κάθε χρόνο στον Πρωταρά και ξαναεμπιστεύονται το La Cultura Del Gusto. Αυτό από μόνο του λέει πολλά. Γιατί η επανάληψη, ειδικά στην εστίαση, δεν χαρίζεται. Κερδίζεται.
Ο χώρος, για εσένα που δεν το έχεις επισκεφτεί ξανά, έχει μια σύγχρονη, μίνιμαλ αισθητική, χωρίς να προσπαθεί να εντυπωσιάσει με υπερβολές. Εκείνο όμως που τραβά αμέσως το βλέμμα είναι η ανοιχτή, κλεισμένη σε γυάλινους τοίχους, κουζίνα στο κέντρο του εστιατορίου. Οι σεφ κινούνται αδιάκοπα πάνω από τις φωτιές και τις ιαπωνικές σχάρες robata, ενώ οι flambé παρασκευές προσθέτουν εκείνο το μικρό θεατρικό στοιχείο που κάνει το δείπνο κάτι περισσότερο από μια απλή έξοδο για φαγητό.
Και αυτή τη φορά καθίσαμε ακριβώς δίπλα στην κάβα και στα ψυγεία ωρίμανσης των εκλεκτών κρεατικών. Δύσκολο σημείο να αντισταθείς όταν απέναντί σου έχεις τέτοιο θέαμα.
Η φιλοσοφία της κουζίνας κινείται ανάμεσα στη Μεσόγειο και την Ασία, με διεθνείς αναφορές και μια ιδιαίτερη αδυναμία στα premium κρεατικά. Η ίδια η ταυτότητα του εστιατορίου δίνει έμφαση στις εκλεκτές κοπές, ενώ η παρουσία των κρασιών και η walk-in κάβα ανοίγουν διάπλατα τους οινικούς ορίζοντες.
Ξεκίνημα γευστικότατο με σπιτική φοκάτσια και τις signature αλοιφές, πριν περάσουμε στα πιο σύνθετα.
Το ceviche με σολομό και γαρίδες ήρθε δροσερό, αρωματικό και με ωραία οξύτητα. Το “γάλα του τίγρη” έδωσε την απαραίτητη ένταση, το φρούτο του πάθους μια τροπική γλυκύτητα και τα φύκια wakame εκείνη τη θαλασσινή, ιωδιούχα νότα που έδεσε όμορφα το σύνολο. Ένα πιάτο που σε βάζει από νωρίς στο κλίμα της βραδιάς.

Ακολούθησε το New Style Beef Tartar. Ένα από εκείνα τα πιάτα που έχω συνδέσει πλέον με το La Cultura Del Gusto. Φρέσκα βότανα, emulsion από miso και πορτοκάλι, πιπεριά Φλωρίνης και τρούφα, σε μια εκδοχή όπου η ένταση δεν καλύπτει την πρώτη ύλη αλλά λειτουργεί συμπληρωματικά. Αν έπρεπε να κρατήσω ένα πιάτο από τα ορεκτικά για να παραμείνει στον κατάλογο για πολλά ακόμη χρόνια, θα ήταν αυτό.

Και κάπου εδώ εμφανίζεται το Wagyu carpaccio. Εξαιρετική μαρμάρωση, σχεδόν μεταξένια υφή και εκείνο το λιώσιμο στο στόμα που περιμένεις από μια τόσο εκλεκτή κοπή. Από πάνω, τραγανά λαχανικά τεμπούρα δημιουργούν μια όμορφη αντίθεση υφών, ενώ οι σος φέρνουν μαζί τους γεύσεις από την Ιαπωνία και νότες που παραπέμπουν μέχρι και στο Περού. Πολυπολιτισμικό πιάτο, χωρίς να γίνεται γαστρονομικό μπέρδεμα.

Για το κρασί, αυτή τη φορά το βλέμμα μας πήγε σε ένα ρουμπινί, γεμάτο σε σώμα, Primitivo, που μεταγγίστηκε με φροντίδα από την ευγενέστατη ομάδα εξυπηρέτησης. Και τώρα αρχίζει το κεφάλαιο για το οποίο το La Cultura Del Gusto έχει κάθε λόγο να υπερηφανεύεται.
Τα ταλιολίνι με τρούφα και βούτυρο παρμεζάνας, σερβιρισμένα μέσα σε ολόκληρο κεφάλι παρμεζάνας, ήταν από μόνα τους ένα μικρό γαστρονομικό θέαμα. Η παρμεζάνα ξύνεται, ανάβει η φωτιά, λιώνει και μέσα σε αυτήν μπαίνουν τα φρεσκοβρασμένα ζυμαρικά για να ανακατευτούν μέχρι να γίνουν ένα σώμα με το τυρί. Στο τέλος, φρεσκοκομμένη τρούφα. Πλούσιο, αρωματικό, απολαυστικό.


Ενημερωτικά, τα κρεατικά, όπως και τα συγκεκριμένα ζυμαρικά, είναι προϊόντα αποκλειστικής εισαγωγής της Delifoods LTD, εταιρείας που ιδρύθηκε το 2012 από τον Λούκα Λουκά, αρχικά για να καλύψει τις ανάγκες του ίδιου του La Cultura Del Gusto και στη συνέχεια εξελίχθηκε σε προμηθευτή ποιοτικών προϊόντων για την κυπριακή αγορά.
Και μετά, η robata παίρνει τη σκυτάλη.
Το Tresnal Argentine grain and corn-fed Angus, από το οποίο δοκιμάσαμε φιλέτο και ribeye, έδωσε δύο διαφορετικές εκφράσεις της ίδιας πρώτης ύλης. Το φιλέτο πιο φίνο και τρυφερό, το ribeye πιο πληθωρικό, με εξαιρετική μαρμάρωση λίπους, δυνατή εξωτερική θωράκιση από τη φωτιά και ζουμερό εσωτερικό. Εδώ, η φωτιά δεν είναι απλώς τρόπος μαγειρέματος. Είναι μέρος της γεύσης.

Και ύστερα ήρθε το Tomahawk από την Imperial Valley, μια εντυπωσιακή κοπή που έφτασε στο τραπέζι μας ολόκληρη και κόπηκε μπροστά μας σε στυλ tagliata. Ζουμερό, γεμάτο γεύση, με την εξωτερική επιφάνεια να έχει πάρει όμορφο χρώμα από τη φωτιά, ενώ στο εσωτερικό παρέμενε τρυφερό και χυμώδες. Το θέαμα της κοπής μπροστά στο τραπέζι προσθέτει κι άλλο ένα μικρό κεφάλαιο στην εμπειρία.

Και αυτό ακριβώς είναι, τελικά, που με εντυπωσιάζει στο La Cultura Del Gusto. Δεν σου σερβίρει απλώς ένα κομμάτι κρέας. Σε βάζει στη διαδικασία να το παρακολουθήσεις. Να δεις τη φωτιά, τον σεφ, τη σχάρα, την κοπή. Να καταλάβεις λίγο περισσότερο τι συμβαίνει πριν το πιάτο φτάσει μπροστά σου.
Η εξυπηρέτηση κινήθηκε για ακόμη μία φορά σε πολύ καλό επίπεδο. Όλοι τους με πηγαία ευγένεια και προθυμία, χωρίς υπερβολές και χωρίς εκείνο το επιτηδευμένο ύφος που πολλές φορές συνοδεύει τα εστιατόρια με premium κρεατικά. Εδώ η ομάδα γνωρίζει τι σερβίρει και αφήνει το προϊόν να μιλήσει.
Και όταν ένα εστιατόριο έχει απέναντί του μια γεμάτη σάλα μια καθημερινή βραδιά, με ανθρώπους που έρχονται για πρώτη φορά αλλά και άλλους που επιστρέφουν ξανά και ξανά, τότε καταλαβαίνεις ότι η σχέση του με το κοινό του έχει περάσει σε άλλο επίπεδο.
Για το τέλος, η τάρτα λεμονιού. Δροσερή, με όμορφη οξύτητα και καθαρή επίγευση, ήρθε να κλείσει τη βραδιά χωρίς να προσθέσει περιττό βάρος μετά από ένα δείπνο όπου το κρέας και η τρούφα είχαν ήδη κάνει τη δουλειά τους.
Φεύγοντας, κρατάς εκείνο το γνώριμο συναίσθημα της σταθερής αξίας.
Το La Cultura Del Gusto δεν χρειάζεται πλέον να αποδείξει ότι μπορεί να σταθεί στον χρόνο. Το έχει ήδη κάνει. Περισσότερες από δύο δεκαετίες μετά το ξεκίνημά του, συνεχίζει να επενδύει στην ποιότητα, στα εκλεκτά προϊόντα, στο κρασί, στη φιλοξενία και – πάνω απ’ όλα – στην αγάπη για τη γαστρονομία.
Και ίσως αυτό να είναι τελικά το μεγαλύτερο του επίτευγμα: να μπορείς να επιστρέφεις μετά από τόσα χρόνια και να βρίσκεις έναν γνώριμο γαστρονομικό προορισμό που δεν έχει επαναπαυθεί στη φήμη του.

La Cultura Del Gusto. Consistency, Fire and Exceptional Cuts of Meat. We went back……..
There is one simple truth: the real value of a restaurant reveals itself over time. In the quality that remains consistent, in the reliability that builds trust and, above all, in the desire of guests to return, knowing they will once again find the familiar dining experience they are looking for.
La Cultura Del Gusto in Pernera clearly belongs to this category. Since 2002, it has managed to remain an important dining destination in Protaras, an area where much of the restaurant business is seasonal. La Cultura Del Gusto, however, has continued to move forward, building a lasting relationship with both locals and visitors to the island. And this is not simply an observation; it is something you sense from the moment you walk through the door.
We went back on a weekday, and the restaurant was, as usual, full. Locals, international visitors and returning holidaymakers — people who come back to Protaras year after year and continue to choose La Cultura Del Gusto. That alone says a great deal. Because repeat business, especially in hospitality, is never given. It has to be earned.
For those who have not visited before, the interior has a contemporary, minimalist aesthetic, without trying to impress through excess. What immediately catches the eye, however, is the open kitchen at the heart of the restaurant, enclosed by glass walls. The chefs move constantly around the flames and Japanese robata grills, while the flambé preparations add that touch of theatre that turns dinner into something more than simply a meal out.
This time, we were seated right next to the wine cellar and the ageing cabinets where the restaurant’s premium cuts of meat are kept. Not exactly the easiest place to resist temptation when you have such a display right in front of you.
The cuisine moves between the Mediterranean and Asia, with international influences and a particular focus on premium meats. The restaurant’s identity places considerable emphasis on carefully selected cuts, while its wines and walk-in cellar open up an equally impressive world of possibilities for wine lovers.
We began with delicious homemade focaccia and the restaurant’s signature spreads before moving on to the more elaborate dishes.
The salmon and prawn ceviche arrived fresh, aromatic and beautifully balanced by acidity. The leche de tigre brought the necessary intensity, passion fruit added a touch of tropical sweetness, while wakame seaweed contributed that distinctly marine, almost iodine-like character that brought everything together. A dish that sets the tone for the evening from the very beginning.

Next came the New Style Beef Tartare, one of those dishes I have now come to associate with La Cultura Del Gusto. Fresh herbs, a miso and orange emulsion, Florina pepper and truffle come together in a version where the intensity does not overpower the beef but works in harmony with it. If I had to choose one starter to remain on the menu for many years to come, this would be it.

Then came the Wagyu carpaccio. Exceptional marbling, an almost silky texture and that melt-in-the-mouth quality you expect from such a distinguished cut. Crispy tempura vegetables on top created a beautiful contrast in texture, while the sauces brought together Japanese flavours with notes that reached as far as Peru. A truly multicultural dish, without ever becoming confused.

For wine, our attention turned this time to a ruby-red, full-bodied Primitivo, carefully decanted by the exceptionally courteous service team. And this is where the chapter for which La Cultura Del Gusto has every reason to be proud begins.
The tagliolini with truffle and Parmesan butter, served inside a whole wheel of Parmesan, were a small gastronomic spectacle in themselves. Parmesan is scraped from the wheel, the flame is brought to it, the cheese begins to melt and the freshly cooked pasta is added and tossed until it becomes one with the cheese. Freshly shaved truffle is added at the end. Rich, aromatic and deeply satisfying.


For context, the meats, as well as these particular pasta products, are exclusively imported by Delifoods LTD, a company founded in 2012 by Louka Louka, initially to meet the needs of La Cultura Del Gusto itself and subsequently developing into a supplier of quality products for the Cypriot market.
And then the robata takes centre stage.
The Tresnal Argentine grain- and corn-fed Angus, from which we sampled both fillet and ribeye, offered two very different expressions of the same exceptional ingredient. The fillet was finer and more delicate, while the ribeye was more generous, with beautiful fat marbling, a deeply charred exterior from the fire and a juicy, succulent centre. Here, fire is not simply a cooking method. It is part of the flavour.

Then came the Tomahawk from Imperial Valley, an impressive cut that arrived at our table whole before being carved in front of us, tagliata-style. Juicy and full of flavour, with a beautifully coloured crust from the fire while remaining tender and succulent inside. Watching it being carved tableside adds yet another small chapter to the experience.

And that, ultimately, is what impresses me about La Cultura Del Gusto. It does not simply serve you a piece of meat. It invites you into the process. You see the fire, the chef, the grill, the carving. You gain a better understanding of what happens before the dish reaches your table.
Once again, the service was at a very good level. The entire team was genuinely warm and willing to help, without excess and without the affected manner that can sometimes accompany restaurants specialising in premium meats. Here, the team knows what it is serving and allows the produce to speak for itself.
And when a restaurant has a full dining room on an ordinary weekday evening, with first-time guests alongside people who return again and again, you realise that its relationship with its clientele has reached another level.
For dessert, the lemon tart. Fresh, beautifully balanced by acidity and with a clean finish, it brought the evening to a close without adding unnecessary weight after a dinner in which the meat and truffle had already made their mark.
As you leave, you take with you that familiar feeling of dependable quality.
La Cultura Del Gusto no longer needs to prove that it can stand the test of time. It already has. More than two decades after opening its doors, it continues to invest in quality, exceptional produce, wine, hospitality and, above all, a genuine passion for gastronomy.
And perhaps that is its greatest achievement: being able to return after all these years and find a familiar dining destination that has never become complacent about its reputation.
