
Με πρόσημο τη φρεσκάδα, το Vetrina χάραξε μέσα σε λίγους μήνες τη δική του οινογαστρονομική γραμμή σε έναν από τους πιο εμβληματικούς χώρους της πρωτεύουσας. Στο The Landmark Nicosia, Autograph Collection, το μέχρι πρότινος ιστορικό Hilton της Λευκωσίας έχει περάσει σε μια νέα εποχή. Το κτίριο διατήρησε στοιχεία από την παλιά του αίγλη, ανανεώθηκε και απέκτησε μια σύγχρονη ταυτότητα, χωρίς να χάσει τη σύνδεσή του με την ιστορία της πόλης. Σε αυτό το σκηνικό, το Vetrina έρχεται να προσθέσει μια διαφορετική γαστρονομική πρόταση, με τη Μεσόγειο, το κρασί και το deli να βρίσκονται στο επίκεντρο.



Η αλήθεια είναι πως, πριν ακόμη καθίσουμε στο τραπέζι, θελήσαμε να γνωρίσουμε καλύτερα τον χώρο. Οι καλαίσθητες βιτρίνες του deli τραβούν αμέσως το βλέμμα με τα εκλεκτά τυριά, τα αλλαντικά, τα artisanal προϊόντα, τις pasta fresca, τις σάλτσες, τα ελαιόλαδα και όλα εκείνα τα μικρά εδέσματα που σε βάζουν στον πειρασμό να πάρεις κάτι μαζί σου φεύγοντας. Το όνομα Vetrina, άλλωστε, που στα ιταλικά σημαίνει “βιτρίνα”, δεν θα μπορούσε να είναι πιο εύστοχο.

Και κάπου εκεί αρχίζεις να παρατηρείς τις λεπτομέρειες. Τις αναφορές στη ρωμαϊκή αρχιτεκτονική, τις καμάρες, τα διακοσμητικά στοιχεία, τις ψηφίδες που παραπέμπουν στην αρχαία τέχνη του ψηφιδωτού, τα γεωμετρικά μοτίβα και τις διακριτικές αναφορές στην Κύπρο και στην Αφροδίτη. Ένα σκηνικό που δεν φωνάζει την ιστορία του, αλλά την αφήνει να ξεδιπλώνεται σιγά σιγά μπροστά στα μάτια σου.


Εμείς πάντως επιλέξαμε τους εξωτερικούς κήπους του Vetrina. Και εδώ, η αίσθηση αλλάζει. Νιώθεις κυριολεκτικά πως βρίσκεσαι μέσα σε έναν κήπο, με το πράσινο να σε αγκαλιάζει, τους επιβλητικούς πύργους του The Landmark Nicosia να ορθώνονται απέναντί σου και την όλη εικόνα να αποκτά εκείνη τη χαλαρή κοσμοπολίτικη διάθεση που ταιριάζει απόλυτα σε ένα all-day wine & dining destination.

Πριν ακόμη πάρουμε θέση, όμως, είχαμε έναν ακόμη λόγο να περιηγηθούμε στον οινικό κόσμο του Vetrina. Με συνοδό μας τον Head Sommelier Γιώργο Ακριτίδη, μπήκαμε στην walk-in κάβα και χαθήκαμε ανάμεσα σε περισσότερες από 250 ετικέτες. Wine consultant του Vetrina είναι ο Master Sommelier Σωτήρης Νεοφυτίδης, ενώ η κάβα τιμά την Κύπρο, την Ελλάδα και τη Μεσόγειο, με ιδιαίτερη έμφαση στη Γαλλία και την Ιταλία, χωρίς να λείπουν οι αναφορές στον Νέο Κόσμο. Αξιοσημείωτο είναι δε το γεγονός ότι αρκετές από τις ετικέτες προσφέρονται και σε ποτήρι, κάτι που δίνει ακόμη μεγαλύτερη ελευθερία στο οινόφιλο κοινό, αλλά και στους επαγγελματίες του κρασιού, να εξερευνήσουν διαφορετικά food & wine pairings.



Με sharing διάθεση πήραμε στα χέρια μας την κάρτα, που εστιάζεται στη Μεσόγειο, με επιλογές που μπορούν να σταθούν εξίσου όμορφα σε ένα χαλαρό lunch ή σε ένα βραδινό τραπέζι με φίλους. Με βοηθούς μας τον Γιώργο και τον ιδιαίτερα έμπειρο διευθυντή του εστιατορίου, Σπύρο Γιώργη, οργανώσαμε τις οινογαστριμαργικές μας επιλογές στην ευάερη βεράντα.

Το καλωσόρισμα έγινε με Ruinart Champagne Blanc de Blancs N/V, που άνοιξε ιδανικά τον κύκλο της βραδιάς. Στο τραπέζι έφτασε το Signature Artisan Cheese & Charcuterie Platter, μια πλούσια σύνθεση από Brie La Fontaine, Emmentaler Swiss A.O.P., Buche de Luay chèvre white mould, αλλά και Mortadella Gran Bologna IGP Santo, Prosciutto Cotto Giglio και Finocchiona IGP salami. Μαζί, focaccia ψημένη στον ξυλόφουρνο, crostini και σκούρο ψωμί. Μια πιατέλα που δεν χρειάζεται πολλά λόγια· θέλει καλή παρέα, ένα ποτήρι κρασί και χρόνο.


Από την κατηγορία small bites, οι ελληνικές μαριναρισμένες αντζούγιες σε φρυγανισμένο προζυμένιο ψωμί, νοτισμένες με brunoise ντομάτας, κάπαρη και ελαιόλαδο, έφεραν αμέσως στο τραπέζι εκείνη τη γνώριμη θαλασσινή γεύση της Μεσογείου, αλλά με μια πιο κομψή προσέγγιση.

Για τα πιάτα που ακολούθησαν, μπήκαν στο οινικό παιχνίδι δύο διαφορετικοί χαρακτήρες κρασιών: το Domaine de Burrian “Admiration”, Côtes de Provence 2023, αλλά και το Edouard Delaunay Bourgogne Pinot Noir 2023. Και ναι, αυτή η λογική του παράλληλου pairing, με δύο διαφορετικά κρασιά να βρίσκονται ταυτόχρονα στο τραπέζι, είναι από εκείνες τις οινογαστρονομικές προσεγγίσεις που αποκτούν ιδιαίτερο ενδιαφέρον όταν βρίσκεσαι σε έναν χώρο με τέτοια κάβα. Το Beef Tartare, με τραγανές πατάτες και παστό κρόκο αυγού, είχε την ένταση που περιμένεις από ένα καλό tartare, τα κρεμώδη στοιχεία από το αυγό, αλλά και την απαραίτητη τραγανότητα για να μη μείνει η εμπειρία μονοδιάστατη.

Η σαλάτα με παντζάρια ψημένα σε αλάτι, ρικότα και ρόδι κινήθηκε σε πιο γήινες αποχρώσεις. Το παντζάρι έφερνε τη φυσική του γλύκα, η ρικότα προσγείωνε το σύνολο και το ρόδι πρόσθετε εκείνη τη μικρή όξινη σπίθα που χρειάζεται ένα πιάτο για να αποκτήσει ζωντάνια.


Το επόμενο οινικό πέρασμα μάς ταξίδεψε στη Σικελία. IDDA Bianco 2024, από την ποικιλία Carricante, και η κουζίνα πήρε σειρά. Οι γαρίδες Pil Pil, με κόκκινη πιπεριά τσίλι, σκόρδο και τραγανά κρουτόν, ήρθαν με εκείνη τη γενναιόδωρη μεσογειακή λογική. Γαρίδα, σκόρδο, πιπεριά και τραγανό ψωμί. Τίποτα περιττό.

Και μετά ήρθε η Romana Pinsa, ψημένη στον ξυλόφουρνο, με burrata, prosciutto crudo και ρόκα. Εδώ το τραγανό της βάσης συνάντησε τη βελούδινη burrata και την αλμυρή νοστιμιά του prosciutto, σε ένα έδεσμα που, ομολογώ, δύσκολα αφήνει το χέρι σου να απομακρυνθεί από το τραπέζι.

Ακολούθησαν οι μικρές, σφαίρες μουσακά, με τυρί Μετσοβόνε και λαχανικά, έτοιμες να βουτήξουν στη συνοδευτική μαρμελάδα ντομάτας. Μια γεύση οικεία, μα συνάμα δημιουργική στην παρουσίαση.

Το Italo Cescon “Madre” 2021, Veneto IGT, από Manzoni Bianco, ανέλαβε να συνοδεύσει τη γαστρονομική συνέχεια, όπου πλέον ο πρωταγωνιστής ήταν ξεκάθαρα το ψάρι και το ξυλοκάρβουνο. Το φιλέτο λαβρακιού στη σχάρα, με καπονάτα ελιάς και ψιλοκομμένα γλυκά του κουταλιού, ήρθε με τραγανή πέτσα και ζουμερή σάρκα. Ένα πιάτο που ισορρόπησε όμορφα ανάμεσα στη θαλασσινή καθαρότητα του ψαριού και στις γλυκόξινες πινελιές της caponata και πραγματικά εντυπωσίασε γευστικά όλη την παρέα.

Το καλαμάρι σχάρας με λευκό ταραμά εμπλουτισμένο με καπνιστή μελιτζάνα, ως πιάτο ημέρας, είναι από εκείνα τα πιάτα που θα ήθελα να δω να παραμένουν στην κάρτα. Το καλαμάρι είχε σωστή υφή και το καπνιστό στοιχείο της μελιτζάνας έδωσε στον λευκό ταραμά έναν χαρακτήρα που ανέβασε ολόκληρο το πιάτο στον έβδομο γευστικό ουρανό.

Το δε κριθαρότο γαρίδας με bisque, επίσης πιάτο ημέρας, ήρθε καπελωμένο με μια πραγματικά μεγάλη, όμορφα ψημένη και ζουμερή γαρίδα να δεσπόζει στην κορυφή και έδωσε με τον καλύτερο τρόπο τα γευστικά του διαπιστευτήρια. Η bisque έδωσε το απαραίτητο βάθος, ενώ το ψήσιμο στον ξυλόφουρνο πρόσθεσε το διακριτικό κάπνισμα.

Και κάπου εδώ αντιλαμβάνεσαι τι θέλει να κάνει το Vetrina. Δεν προσπαθεί να σε πείσει πως ανακάλυψε ξανά τη μεσογειακή κουζίνα. Παίρνει προϊόντα, γεύσεις και μνήμες που ήδη γνωρίζουμε και τα μεταφέρει σε ένα πιο σύγχρονο, κοσμοπολίτικο περιβάλλον, όπου το κρασί έχει ισότιμο ρόλο με το φαγητό. Άλλωστε, το ίδιο το concept του Vetrina βασίζεται στη μεσογειακή κουζίνα, στο sharing και στην εμπειρία του dine, wine & deli, από το πρωί μέχρι αργά το βράδυ.

Το γλυκό μας ήρθε σε μια πιο ανάλαφρη, σχεδόν βελούδινη εκδοχή. Ένα φρεσκότατο tiramisu, το οποίο είχε στηθεί ολόκληρο πάνω στην πιατέλα και, μπροστά μας, ο σερβιτόρος έκοψε και σέρβιρε τις μερίδες στα πιάτα μας. Ανάλαφρο, καθόλου βαρύ και ιδανικό για να κλείσει ένα γεύμα που είχε ήδη κινηθεί σε αρκετές διαφορετικές γευστικές κατευθύνσεις.

Φεύγοντας, εκείνο που μένει είναι η αίσθηση μιας βραδιάς που δεν προσπάθησε να εντυπωσιάσει με φωνές. Το Vetrina έχει τη δική του γλώσσα: κρασί, φαγητό, deli, παρέα και ένας χώρος που συνομιλεί διακριτικά με την ιστορία του κτιρίου που το φιλοξενεί. Η ευγενέστατη, φιλόξενη και προικισμένη με άκρατο επαγγελματισμό ομάδα του γνωρίζει πολύ καλά όχι μόνο τι βρίσκεται στο ποτήρι αλλά και πώς αυτό μπορεί να σταθεί δίπλα στο πιάτο. Κάτι που χαρίζει μια ολιστική εμπειρία, αντάξια αυτής που περιμένεις από έναν τέτοιο προορισμό. Και όταν η εξυπηρέτηση παραμένει ανθρώπινη, πρόσχαρη και χωρίς περιττές τυπικότητες, τότε η φιλοξενία αποκτά ουσία.
Και ναι, σε μια πόλη που αναζητά συνεχώς το επόμενο σημείο συνάντησης, το Vetrina έχει ήδη βρει τη δική του θέση.

Vetrina: A fresh Mediterranean dining and wine destination at the iconic The Landmark Nicosia, Autograph Collection, that has made its mark
With freshness at its heart, Vetrina has, within just a few months, carved out its own identity on the Nicosia dining scene, in one of the capital’s most iconic settings. At The Landmark Nicosia, Autograph Collection, the former Hilton Nicosia has entered a new era. The building has retained elements of its former grandeur while being refreshed with a contemporary identity, without losing its connection to the history of the city. Against this backdrop, Vetrina brings a distinctive culinary proposition, with the Mediterranean, wine and deli culture taking centre stage.



The truth is, before even sitting down at the table, we wanted to get a better feel for the space. The beautifully presented deli displays immediately catch the eye, filled with fine cheeses, charcuterie, artisanal products, fresh pasta, sauces, olive oils and all those little delicacies that tempt you to take something home with you. The name Vetrina, meaning “shop window” or “display window” in Italian, could hardly be more fitting.



And then you begin to notice the details. References to Roman architecture, arches, decorative elements, mosaic-inspired touches, geometric patterns and subtle references to Cyprus and Aphrodite. It is a setting that does not shout about its history, but allows it to reveal itself gradually, detail by detail.

We chose to sit in Vetrina’s outdoor gardens, where the atmosphere changes completely. You genuinely feel as though you are dining in a garden, surrounded by greenery, with the imposing towers of The Landmark Nicosia rising before you. The overall setting takes on that relaxed cosmopolitan character that suits an all-day wine and dining destination perfectly.

Before taking our seats, however, we had one more reason to explore Vetrina’s wine world. Accompanied by Head Sommelier George Akritidis, we stepped into the walk-in wine cellar and found ourselves surrounded by more than 250 labels. Vetrina’s wine consultant is Master Sommelier Sotiris Neofytidis, while the cellar celebrates Cyprus, Greece and the Mediterranean, with a particular emphasis on France and Italy, alongside selections from the New World. Particularly noteworthy is the fact that a considerable number of these wines are also available by the glass, giving wine lovers — as well as wine professionals — greater freedom to explore different food and wine pairings.

With a sharing approach in mind, we turned our attention to the menu, which focuses on Mediterranean flavours and offers dishes equally suited to a relaxed lunch or an evening around the table with friends. With George and the highly experienced restaurant manager, Spyros Giorgis, guiding us, we put together our food and wine selections and settled onto the airy terrace.

The evening began with Ruinart Champagne Blanc de Blancs N/V, an elegant way to open the meal. At the table came the Signature Artisan Cheese & Charcuterie Platter, a generous selection featuring Brie La Fontaine, Emmentaler Swiss A.O.P., Buche de Luay chèvre white mould, Mortadella Gran Bologna IGP Santo, Prosciutto Cotto Giglio and Finocchiona IGP salami. Alongside came wood-fired focaccia, crostini and dark bread. This is the kind of platter that needs very little explanation; it simply calls for good company, a good glass of wine and time.


From the small bites section, the Greek marinated anchovies served on toasted sourdough, with tomato brunoise, capers and olive oil, immediately brought the familiar flavours of the Mediterranean to the table, but in a more refined form.

For the dishes that followed, two wines with very different personalities entered the pairing: Domaine de Burrian “Admiration”, Côtes de Provence 2023, and Edouard Delaunay Bourgogne Pinot Noir 2023. And yes, this approach of having two different wines on the table at the same time is one of those wine-and-food experiences that becomes particularly interesting when you find yourself in a restaurant with such a well-curated cellar. The Beef Tartare, served with crisp potatoes and cured egg yolk, delivered the intensity expected from a good tartare, while the creamy richness of the egg and the necessary crunch ensured that the dish never became one-dimensional.

The salad of salt-baked beetroot, ricotta and pomegranate moved into earthier territory. The beetroot brought its natural sweetness, the ricotta softened and grounded the dish, while the pomegranate added the little touch of acidity needed to give it freshness and vitality.

Our next wine took us to Sicily. IDDA Bianco 2024, made from Carricante, set the stage for the next course. The Pil Pil prawns, with red chilli, garlic and crisp croutons, arrived with that generous Mediterranean spirit. Prawn, garlic, chilli and crunchy bread. Nothing unnecessary.

Then came the Romana Pinsa, baked in the wood-fired oven and topped with burrata, prosciutto crudo and rocket. Here, the crisp base met the velvety burrata and the savoury richness of the prosciutto in a combination that, I admit, makes it rather difficult to keep your hands away from the table.

Next came small, bite-sized spheres of moussaka, with Metsovone cheese and vegetables, ready to be dipped into the accompanying tomato jam. A familiar flavour, given a more playful and creative presentation.

Italo Cescon “Madre” 2021, Veneto IGT, made from Manzoni Bianco, took over for the next stage of the meal, where fish and charcoal clearly became the protagonists. The grilled sea bass fillet, served with olive caponata and finely chopped spoon sweets, arrived with crisp skin and juicy flesh. It struck a pleasing balance between the clean, delicate flavour of the fish and the sweet-and-sour accents of the caponata, and genuinely impressed everyone at the table.

The grilled calamari with white tarama enriched with smoked aubergine, a daily special, was one of those dishes I would happily see remain on the menu. The calamari had exactly the right texture, while the smoky aubergine gave the white tarama an extra dimension that lifted the dish considerably.

The prawn orzo, also a daily special, arrived crowned with a generously sized, beautifully grilled and succulent prawn. The bisque provided the necessary depth of flavour, while the wood-fired cooking added a subtle smokiness.

And somewhere around this point, you begin to understand what Vetrina is trying to achieve. It is not attempting to convince you that it has reinvented Mediterranean cuisine. Instead, it takes products, flavours and memories that we already know and places them in a more contemporary, cosmopolitan setting, where wine is given an equal role alongside food. After all, Vetrina’s concept is built around Mediterranean cuisine, sharing and the dine, wine & deli experience, from morning until late at night.


Dessert arrived in a lighter, almost velvety form. A wonderfully fresh tiramisu was presented whole on a platter, before the waiter sliced it and served individual portions directly at the table. Light, never heavy, and an ideal way to bring a meal to a close after so many different flavours and directions.

As we left, what stayed with us was the feeling of an evening that never needed to make a fuss to impress. Vetrina has its own language: wine, food, deli, good company and a setting that quietly converses with the history of the building that houses it.
Its exceptionally courteous, welcoming and highly professional team knows not only what is in the glass, but also how to make it work alongside what is on the plate. That creates a complete dining experience, worthy of the kind of destination Vetrina aspires to be. And when service remains warm, genuine and free of unnecessary formality, hospitality takes on real meaning.
And yes, in a city that is constantly looking for its next meeting point, Vetrina has already found its place.
